BREAST OF WOOD PIGEON SMOKED WITH CLOVES AND MARJORAM, PEAR CRISP
Beef jus, rosemary and cinnamon poached peach, game pate, pigeon roulade, garlic and tomato chutney, mango and red onion salad

(Our wood pigeon is shot in the wild.  It is possible shot traces to still be contained within the meat.)

 

TENDER BREAST OF POUSSIN MARINATED IN FRESH TURMERIC AND CUMIN, PARSNIP CRISP
Chicken jus, chicken roulade, foraged salad, chicken and lemon raita, coriander chutney, mango and red onion salad

 

TRIO OF VEGETARIAN STREET FOOD
Crispy poori, sweet potato and chick pea flour dumpling, steamed south Indian rice cake, tomato chutney. 

 

SEAFOOD, LOCALLY FORAGED KELP, PICKLED SAMPHIRE, WILD SALMON CAVIAR, BANANA CRISP
Fish jus, crab cake, prawn dumpling, date and tamarind chutney, grilled Tilapia, smoked crab raita, alfa alfa sprouts

(We take great care to remove bones from our fish wherever possible.  It is possible that some bones remain in the fish.)

 

DOSAI WITH GENTLY SPICED POTATOES, MUSTARD
AND ONIONS, SAMBHAR, TROPICAL SEASONAL FRUITS, CHICK PEA FLOUR CRISPS

Garlic, coconut, green pea and pineapple chutney, chopped coriander, tomato pickle sauce

The dosai is a South Indian crepe. Those with wheat allergies or gluten intolerance will find the dosai a nice addition to their diets

 

MAIN COURSES

BELLY OF BRITISH PORK, BROCOLLI, PULLED PORK STICK Apple chutney, apple pickle, pea shoots, dauphinoise potatoes, crackling, beetroot, red radish, carrot, cucumber, sauce of green apple and lemongrass          

 

BALLOTINE OF CHICKEN SUPREME, COTTAGE CHEESE, SUNDRIED TOMATOS AND ROASTED PEPPER STUFFING, CHICKEN LIVER SAMOSA, ROSTI

Cauliflower, mint and coriander chutney, pickled cucumber, carrot, parsnip crisp,         

South Indian sauce, alfa alfa sprouts, crispy onion, fresh coriander                                      

 

FRESH FISH OF THE DAY, LOCALLY GROWN SEA SPINACH AND TOOR LENTIL, FENNEL CRUSTED POTATO

Lemon rice, pickled fennel, mustard cress, star fruit, kelp, samphire, coriander,             

Kerala coconut sauce. (It is possible that some bones will remain in the fish)

 

BRITISH LAMB COOKED THREE WAYS, SADDLE, INNER FILLET, MINT ROULADE, MUTTON SAMOSA, PIN WHEEL POTATO

Mango chutney, stir fried mushrooms, sweet potato crisp, red radish, pansy petal, courgette, carrot, beetroot, saffron lamb velouté

 

ROASTED AUBERGINE MASH, FLAVOURED WITH GARLIC AND RED PEPPER, KENTISH GOATS CHEESE, DUCHESS POTATO

Aubergine fritter, cumin spiced Toor lentil, asparagus, sprouts, pickled courgette,         

carrot, sauce of green pea and herbs

 

DESSERTS

LEMON & POMEGRANATE BAVAROIS Kopra Pak, lemon verbena and white chocolate cream, fresh pears

CHOCOLATE TART cashew nut brittle, warm vanilla and brandy cream

ROSE AND VANILLA CRÈME BRULEE Strawberry coulis, mango coulis, meringue, dehydrated rose petal brittle, fresh strawberry

 

KENT PEARS AND STAR ANISE CRUMBLE Warm masala chai custard, fresh apple, pansy petal

The full price of the food will be charged in the event that you do not show up for your reservaiton.  This menu is subject to change due to availability of produce.
